more food!

i can't get over food. cooking and baking has become my newest hobby. thanks to bountiful baskets i now have a huge influx of various vegetables and fruits coming in the house. we've been experimenting up a storm and man, has it been fun! tomorrow i'm going to make some yummy tuscan sausage and chard soup from a recipe i found over on the website allrecipes. head over there and explore the pages and pages of recipes they've compiled.

i forgot to mention the chocolate-beet cupcakes i made yesterday were a huge hit. the boys LOVED them and didn't even know they were eating beets. (sometimes a mom has to be a little sneaky in order to make sure her boys are eating healthy.)

just call me martha...

i've been cooking, baking, and dehydrating goodies all day. right now i'm getting the ingredients together for chocolate-beet cupcakes. i'm not a fan of beets but we got a few in our bountiful basket the other day and i wanted to find something to do with them. while reading articles over at huffingtonpost.com i saw this amazing sounding recipe on a sidebar. i hope it tastes as good as it looks! right now i'm dehydrating pear and kiwi's and the kitchen smells divine. nothing like messing around in the kitchen on a dreary day.

whats for dinner?

feeling ultra lazy today. the week has only just begun but i'm knee deep in clean laundry and feel like i've been vacuuming for days, needless to say i didn't much feel like making dinner. enter my new found love for pesto. seems it can be made from anything and everything and the boys love it...well 2 out of 3 do. for a simple dinner i put on a little florence and the machine and searched the web for pesto made from broccoli. i seem to have a surplus of it right now but you can really just put in whatever veggie you want to make your pesto from and voila! my search brought up a cute little site called green kitchen stories that has all kinds of yummy vegetarian recipes. we aren't 100% veggie in this house but we do subsist mainly on produce in this house, organic, pasture raised meat is too costly to eat every day. their broccoli pesto recipe was AMAZING!! i tossed some elbow noodles in to it and shredded a little parm over the top and we feasted like kings. later tonight i'm looking forward to exploring green kitchen stories and finding more things to try. enjoy!
